Beet Chickpeas hummus is a slightly sweet recipe is made with oven roasted beets, chickpeas, tahini, olive oil, lemon juice and garlic. It’s a vibrant and healthy snack or appetizer served with crackers or with veggies.

1 small red beetroot
1 garlic clove
20 grams cooked chickpeas, drained and rinsed
1 teaspoon tahini (sesame seed paste)
1 teaspoon extra-virgin olive oil
½ teaspoon fresh lemon juice
1 tablespoon warm water
1 spring chopped coriander (optional)
1 sprig parsley chopped for garnish
Salt and pepper to taste

Preheat the oven to 400°F. Sprinkle the beet with olive oil and then wrap the beet and garlic together in foil. Place on baking sheet and roast 30 to 40 minutes, or until the beet is fork-tender.
When cool enough to handle, peel the skins of beet root. Chop the beet and place it in a blender. Add the garlic, chickpeas, tahini, olive oil, lemon juice, and water and blend until smooth. Add coriander, if you like.
Transfer the beet hummus to a serving bowl and Garnish with parsley.
